Wonderful with coffee for morning tea!!

 

Spicy Date and Pecan Cookies

 

185g butter, chopped

2 teaspoons vanilla essence

½ cup (110g) caster sugar

1 egg yolk

1 ½ cups (225g) self-raising flour

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1/2 (110g) cup chopped, seeded dates

½ cup (50g) chopped pecan nuts

2/3 cup (70g) pecan halves

 

Beat the butter, sugar and egg yolk in a small bowl with an electric mixer until light and fluffy. Stir in sifted flour and spices, then dates and chopped pecans.

 

Preheat oven to moderately hot. Roll rounded teaspoons of the mixture into balls and place 4cm apart on a greased oven trays. Top with pecan halves and bake in oven for 12 minutes or until slightly browned. Cool on trays before removing and store in an airtight container AFTER trying one or two with coffee of course!.

Coffee.

It is extremely important know how to make a great cup (mug) of coffee – especially to coffee lovers.

boil water

Place a teaspoon (heaped for a mug) in a cup (mug)

Place the appropriate amount to sugar in cup (mug)

For those that take cream or milk NOW is the time to add to the cup (mug).

Why you ask? What difference does it make? Well it is simple really; pouring boiling water onto coffee granules or even powdered coffe will BURN it. Yes! You read that right! Boiling water pored directly onto coffee powder or granules burns it. The water used in cafe’s in their machines is just below boiling point as it drips over fresh ground coffee beans. Mmmmmm fresh ground coffee beans. Oh Sorry!

Ok once the milk or cream has been added and the water boiled you slowly add the water to the cup (mug). Hmmm the aroma of coffee invades the senses!
